This month we are welcoming: Hamish Martin, Director, The Old Curiosity Distilery, Larah Bross, Founder of Bross Bagels and Chris Perry-Jones of Hawkhead Kitchen

In 2012, Co-Founder, Hamish Martin and his wife Liberty bought a derelict plot of land on the outskirts of Edinburgh where they laid the roots of The Secret Herb Garden. In 2016 Steve Ross, Old Curiosity Distillery Co-founder number two, joined the Secret Herb Garden as a volunteer to learn more about the incredible powers of herbs. Steve owned a successful bar in South London, and had spent two decades working within the events industry and as a mixologist. Between them The Old Curiosity Distillery was founded in 2017.

Larah Bross is a lady with on a mission to bring the real, authentic bagel to Edinburgh. Larah is from Montreal; the bagel capital of the world that always gets overlooked by the other bagel capital of the world, New York. Instead of complaining about the lack of bagels the UK has to offer she I decided to do something about it.

By working closely with Debra from Breadshare, Bross Bagels aims to bring authentic bagels to Edinburgh and beyond.

Chris was a chef in France, but returned to Glasgow with a love for smoked salmon and slow cooked bbq. While curing salmon for the smoker, he decided to smoke the salt before curing it, so as to give the salmon a double smoke effect. The results were outstanding and when he realised the real winner was the salt, he began experimenting with adding smoke to their existing cashew recipes and the range was complete. Chris set up in the old buildings of the Hawkhead Asylum and so Hawkhead Kitchen was born.

Hawkhead cashews & salts are now smoked over whisky barrel oak sourced from Lowland Distilleries. Their smoking wood starts its journey in America as bourbon casks before shipping to Scotland to age whisky. When the barrels age out, they break down the staves and use them in their smokehouse. This is what gives us a rich but mellow taste.
